Early July means lots of red, white and blue, whether it’s USA Independence Day or French Bastille Day. This red, white and blue chilled berry concoction hits all the right yummy notes, combining seasonal berries with a chocolate date nut crust. What could be more patriotic?
INGREDIENTS:
¼ Cup Raw Almonds
3 Tbsp. Raw Walnuts
¼ Cup Cocoa Powder
1 Tsp. Coconut Oil
1/3 Cup Cultured Cashew Cheese
2 Tsp. Agave or Maple Syrup
½ Cup Assorted Berries (Blueberries, Raspberries, Strawberries)
HOW TO MAKE IT:
1. Make the Crust: In a food processor, combine the nuts, cocoa, dates, cocoa powder and coconut oil, pulsing so that mixture is well combined but not too pasty. It should be a bit sticky.
2. Sweeten the Cheese: Combine the cashew cheese and maple syrup using a stick blender or by hand. If you do not have cashew cheese, you can also make a cashew cream by blending cashews and syrup in a high speed blender. Tofu-based cream cheese also works.
3. Layer the Torte: Press the crust mixture into 2-4 cup-size glass dishes until it’s about ½” thick. Top with a layer of sweetened cheese. Top with mixed berries.
4. Chill: Refrigerate for 1 hour or longer.
