Salad is the New Juice: Fresh Summer Veggies

The popularity of juicing is on the rise, whether as a detox and cleansing tool or a way to promote weight loss.   We like it too.  But, call us old-fashioned, we still like the heft that solid food offers.

This easy summer salad brings the fresh veggie, nutrient-packed benefits of juicing  along with the full satisfaction of chewing.

Raw pumpkin seeds are super-satisfying and good sources of protein, as well as iron, zinc, manganese, phosphorus, copper, and potassium.   As with all our recipes, your ingredients may vary so don’t be shy about substitutions, additions or deletions.

Ingredients:

4 leaves kale (lacinato, curly or your choice), thinly sliced

2 cups arugula or leaf lettuce, chopped

2 carrots, sliced thinly and chopped

1/4 cup raw pumpkin seeds

4 radishes

4 broccoli florets, chopped

4-6 garlic scapes, chopped (optional)

1/2 lemon (optional 1 tbsp. balsamic vinegar)

2 tbsp olive oil

salt and pepper to taste

How to make it:

Layer all ingredients starting with kale, arugula (or lettuce) and building from there.  Drizzle with olive oil and squeeze lemon (or vinegar) on top.  Season with salt and pepper to taste.

Serves 2-4.
