Lose Fat With Cabbage, Really
We’re like most everyone else. During the winter we developed an extra layer of insulation. Now that the warmer weather is finally here, we’d like to lose it.
Cabbage has long been known to promote health and has been highly valued for its many medicinal properties.
According to the Roman Marcus Cato, Brassica est quae omnibus holeribus antistat (It is the cabbage which surpasses all other vegetables) Nam venae omnes ubi sufflatae sunt ex cibo, non possunt perspirare (For when all the veins are gorged with food, they cannot breathe). We also hear that Russian princes paid tributes not only with racing horses and jewels, but with garden plots planted with cabbage (kopusta). And scrolls from 1000 BC uncovered in China mention white cabbage as a cure for baldness in men.
So. let’s get our veins breathing, our heads hairy and our bellies flat!
One of our favorite ways to make this happen is to fill up on a delicious Asian-inspired salad that’s inexpensive and easy. Sometimes we even top with tofu we’ve marinated in soy, ginger and garlic. Yum.
Delicious Cabbage Salad
1/4 head of cabbage
3 large carrots
Bunch of cilantro (or veggies to taste)
Toasted sesame oil
Seasoned rice vinegar
